5 شطة حارة تقطف ثمار الفلفل األحمر من الحقول الفلسطينية ويتم تصنيعها بالطريقه التقليديه المتوارثه من األجداد لتصنيع منتج الشطة ذو اللون األحمر المميز والطعم الحار الطبيعي دون إضافة أية منكهات أو صبغات صناعية حيث يتم إضافة الثوم والملح فقط لالستمتاع بنكهة الشطة الفريدة عند إضافتها إلى أطباقكم. RED CHILI SAUCE Red Chili sauce or Shatta is a hot homemade sauce harvested directly from Palestinian fields, made from wholly grounded fresh chili peppers and mixed with garlic and Salt. It is commonly used in Falafel sandwiches, hummus dishes, or as a condiment. 5

7 لبنة أغنام بزيت الزيتون استخلصنا خبرات األجداد لنضعها على مائدتكم في منتج اللبنة بالزيت المصنع بالطريقة التقليدية المتوارثة والتي تضمن الحفاظ على الطعم األصلي للبنة حيث يتم عمل كرات اللبنة الشهية والمستخلصة من حليب الغنم الطازج وغمرها بزيت الزيتون الصافي دون إضافة أية مواد حافظة. SHEEP LABANEH IN OLIVE OIL Sheep Labaneh (dry yoghurt) balls has a consistency like cream cheese but fewer calories with a natural flavor. The homemade labaneh (recipe is inherited through the years) and shaped into balls and covered in olive oil; this is a very old traditional way to store the labaneh and to be continuously served with an original taste. 7

OLIVE PASTE Olive paste (Tapenade) is a smooth paste made from the olive trees that were grown since hundreds of years in the fertile soil of the holy land and the Palestinian mountains. Olive paste whether it s black or green is a frequent feature in Mediterranean kitchens. There are wide ranges of uses for it whether you spread it on the bread or you use it as a natural butter to cook some food with it. 8

NATURAL HONEY Is produced by bees fed on the flowers of the wild herbs and trees such as the flowers of thyme, lavender, clover, citrus, etc, which are grown naturally in the Jordan Valley of the Holy Land. This honey is extracted from beehives run by the Palestinian rural women under the New Farm Company support to produce tasty honey with high quality and enhance marketing the women produced honey in a collective approach. 13

16 مفتول المفتول الفلسطيني أو ما يعرف بالكسكس بعض البلدان ذلك الطبق المصنع من القمح البلدي على شكل كريات صغيرة والذي غاب عن أطباق البعض لصعوبة تصنيعه على الرغم من طعمه اللذيذ أحييناه لنقدمه لك مرة أخرى بذات الطعم القديم دون أية صبغات أومواد حافظة لتتلذذ به مع صلصلة البندورة والبصل والدجاج المسلوق. 17 فريكة تعتبر الفريكة من أهم األطباق التي تميز المطبخ الفلسطيني الشهير وتمتاز بخلوها من الدهون وانخفاض سعراتها الحرارية حيث أنها مصنعة من حبات القمح الخضراء التي يتم حرقها إلعطائها طعم الدخان المميز وتنقيتها من الشوائب لنقدمها لك إما حبة كاملة الستخدامها بدال من األرز في العديد من األطباق أو حبوب مطحونة لتنعم بطعم حساء الفريكة الشهي. FREEKEH Freekeh is considered whole wheat, a lowfat and nearly fat-free food, and, of course, it s vegetarian and vegan. The Palestinian Freekeh has a special taste among all the Middle Eastern Freekehs. Our Palestinian freekeh grows in the northern parts of Palestine and the freekeh is burned to give a smoky taste which is very extra ordinary taste to add to your dish. Whole grain freekeh can be used instead of rice and crushed freekeh can be made in soup. 17

18 الزعتر الفلسطيني المطحون والمخلوط بالتوايل على الطريقة الفلسطينية )خلطة جدتي( الزعتر أو الدقة كما يطلق عليه الفلسطينيون وهو موجود في كل بيت فلسطيني مهما كان مستواه االجتماعي ليشكل بجانب الزيت الفطور االساسي, حيث تقوم الشركة بإعداده حسب وصفة الجدات الفلسطينيات التقليدية يما فيها اضافة السمسم والسماق والبهارات العشبية الخاصة. ZA ATAR GRANDMA S THYME Dried and seasoned thyme leaves; One of the Palestinian traditional meals on breakfast called «Zeit-o-Za tar» where a piece of bread dipped in olive oil then into seasoned thyme, also it used to be mixed with flour paste to make Manaqeesh (Thyme & olive oil spread over flat flour paste then baked). Grandma s thyme is special seasoned thyme recipe developed by New Farm Company derived from the Palestinian Grandmothers recipe. This blend is rich in flavor taste and high nutritional value. 18

19 عصفر العصفر نبتة ذات سيقان قصيرة ذات مظهر مميز وجذاب حيث تعلو هذه السيقان تيجان شوكية تتفتح عن بتالت صفراء تبدأ بالتحول إلى اللون األحمر والبرتقالي عند النضوج. تقوم النساء الفلسطينيات في منطقة الشمال حيث تنمو أجود أنواع العصفر في فلسطين بقطف هذه البتالت لنقدمها إليكم حتى تضيفوا إلى أطباقكم نكهات وألوان طبيعية جذابة. SAFFLOWER The orange-yellow flowers grow in flower heads of Safflower plants it is made up of clusters of green bracts, topped by tufts of deep yellow florets, turning orange as they mature; about 1 to 1 1/2 inches across. It is a short lived plant. Grows in poor, dry soil and in full sun where you find it in the northern parts of Palestine. The safflower can be used on salads, mixed with the sauce spices, and mixed with rice to add the natural color to it. 19

SUMAC Sumac is a spice made by drying berries in the sun collected by Palestinian women from the wild sumac trees growing in the hills of west bank. These berries are then ground up to produce Sumac; %100 natural with no flavor or additives. With a slight sweet and acidic taste, it makes a great addition to a variety of salads and meat 20
