4 Dubai Muscat Words from our chef Each month, we like to share a little of what s cooking in our minds and ovens. Our dishes change frequently. We re always learning about regional cuisines, new techniques and most importantly, what our customers prefer to find on our menus. Flavours of the region Emirates now flies to over 140 destinations and 80 countries all over the world. How many different dishes do you think we send there and bring back? Every month, over 1,500 of our recipes fly to the corners of the globe, and regional tastes are always a consideration. We want to destroy that assembly line image that airline food has, and make our menus so much more complex than the customary chicken or beef you might usually expect to find. Some dishes, like our machbous, Arabic mezze and bzar chicken, are characteristic flavours of Dubai, and we send them to many destinations to impart our own heritage. But we also try to give some local flavour - we have some recipes like chicken salmis from Mauritius, moqueca from Brazil, ghormeh sabzi from Iran and maacher jhol from Bengal, uniquely served on those routes. Others like smoked salmon, scrambled eggs and grilled fish are popular all over, but we try to match them with local ingredients to make sure they fit with the regional palate. Whether you are flying home or abroad, be assured that the menu you are looking at right now has been designed specially each one of over 1,600 routes gets a unique menu card, and not only that, it changes every month. We encourage you, where possible, to look for these regional dishes. If you enjoy them, we ll continue on our search for new and exciting cultural cuisine.
